Hmm, what do we have going on for dessert tacos? I promised someone apple pie, but I could make empanadas and he'd probably be fine with that.

Dessert tacos are whatever anyone wants them to be. There's literally an entire counter devoted to them in the kitchen. Come - make what you like, serve it to whomever. The only rule is: It must be delicious.

These are definitely not "abuela made them" good, but my Spanish teacher in high school was actually from Puerto Rico and taught us how to cook a few things, including beef empanadas... and then I ended up messing with that base recipe to make other flavors.
